STEP 1

How to make cheesecake with banana and cottage cheese with baking? First, prepare the necessary ingredients. Start cooking with the crust. You can make the cheesecake crust regular light or chocolate. In this case, replace regular cookies with chocolate ones.
STEP 2

Grind the shortbread cookies into crumbs. This can be done in the bowl of a stationary blender or by placing the cookies in a thick plastic bag and rolling them thoroughly with a rolling pin. I used a blender.
STEP 3

Add the soft butter to the cookies and beat again until you have fine, moist crumbs.
STEP 4

Spread the crumbs over the bottom and sides of a Ø 22 cm springform baking dish. Bake the crust in an oven preheated to 180°C for about 10 minutes. Cool the finished crust. You will find information and baking forms at the end of the recipe under the steps.
STEP 5

Now prepare the filling. You can replace the cottage cheese with cottage cheese without additives. Read the article about how to choose cottage cheese. The link is at the end of the recipe below the steps. Take a banana that is soft, not overripe, but not hard and greenish. The banana skin should be a rich yellow color without black spots.
STEP 6

In a bowl, combine cottage cheese, sugar, half the sour cream and eggs. Beat with an immersion blender until smooth.
STEP 7

In another bowl, combine the peeled bananas, broken into pieces, and the remaining sour cream. Blend until smooth.
STEP 8

Pour the banana mixture into the curd mixture, add cornstarch and vanillin and mix thoroughly with a whisk until smooth.
STEP 9

Wrap the bottom and sides of the mold with the base in 2-3 layers of foil.
STEP 10

Pour the banana-curd mixture onto the base. Place the mold on a deep baking sheet. Pour warm water into the pan so that it reaches the middle of the sides of the pan. Bake the cheesecake for about 1.5 hours at 160-170℃. Leave the finished cheesecake in the switched off oven for another 30 minutes. STEP 11

Remove the cheesecake from the pan, remove the foil and cool at room temperature. Then refrigerate for 6-8 hours.
STEP 12

Place the cottage cheesecake with bananas on a plate and serve, decorating as you wish. Bon appetit!
