STEP 1
Let's prepare the ingredients according to the list. Almost all vegetables go well with potatoes. You can use both fresh and frozen vegetables. Using frozen ones simplifies and speeds up the cooking process; all that remains is to defrost the vegetables and bake them. Wash the potatoes, peel them and cut them into cubes or pieces of any shape. We wash the potatoes again to remove excess starch and make the dish less high in calories.
STEP 2
Peel the onions and cut them into cubes or rings, as you prefer.
STEP 3
Wash the carrots, peel and cut into cubes or slices. It should be borne in mind that carrots take a little longer to cook compared to other vegetables on the list, so you need to cut them a little smaller than other vegetables.
STEP 4
You can use zucchini or zucchini, pumpkin, bell peppers and other vegetables for baking. They will make the dish tastier and healthier. If you use fresh vegetables, you need to wash them, peel them, remove the seeds and cut them into cubes. I have frozen, pre-prepared pumpkin - washed, peeled and cut into cubes.
STEP 5
You can use other fresh vegetables, such as fresh corn or green peas, they will make the dish brighter, prettier and tastier. Fresh herbs will also add a special taste and color to the dish. For example, fresh parsley, wash a few sprigs, dry them and add them to the ingredients. Place all the cooked vegetables in a deep bowl. Add salt and ground black pepper; you can add any other spices to taste. Mix the vegetables thoroughly.
STEP 6
Grease the baking dish generously with olive oil. Place the vegetables in a baking dish and drizzle oil on top. Preheat the oven to 180 degrees. Cover the top of the pan with foil and place the vegetables in the oven for 20 minutes. Then take out the pan, remove the foil, mix the vegetables and put in the oven without foil for another 10 minutes to brown.
STEP 7
Serve the dish at the table, with meat or as a separate dish. Bon appetit!
