For this dish you need young potatoes, not very large, but not small, even, with a small number of eyes and approximately the same size. The Red Scarlet variety with red skin and yellow flesh is well suited for baking. It bakes quickly enough and does not fall apart. It is better to buy smoked bacon or raw meat sliced. You will need about 6 thin strips.

    Wash the potatoes, dry and peel, trying to keep the tubers as even as possible.

    Pat each potato dry with paper towels to remove excess moisture.

    Salt the tubers, pepper on all sides, sprinkle with Italian herbs (I used a grinder) or ready-made spices suitable for potatoes.

Or prepare the sauce: 3 tbsp. l. combine sour cream with 1 tbsp. l. olive oil, 1 tbsp. l. lemon juice and 1 tsp. grainy mustard. Stir or blend in a blender for a more uniform consistency.

Potatoes wrapped in bacon baked in the oven are super! I continue to experiment with bacon and this time I baked potatoes in it according to this recipe) I took four pieces to try. I don’t know the type of potato, but it had red skin. My smoked bacon is very thinly sliced. The potatoes were first sprinkled with salt on all sides, flavored with paprika and dried parsley. The thin strips of bacon bend well and wrapped the potatoes without any problems. I decided to bake it in a dish with a lid; after all, the potatoes are raw and will obviously take longer to cook than ready-made bacon) I also baked them for 40 minutes. During this time, the potatoes had time to bake and became soft, and the bacon was baked until crispy, but remained slightly elastic. I really liked the taste! The potatoes were soaked in fat and spices and absorbed delicious aromas. I added a little salt to the inside of the potatoes. I liked the recipe, I'll take note)

I couldn’t find the Red Scarlet variety of potatoes in the supermarket (((. I baked yellow round new potatoes of a variety unknown to me. They baked in the oven for about an hour, so I took the author’s advice and covered the pan with foil so that the bacon didn’t burn. The dish turned out with a bang! The aroma of smoked bacon All my family came running, I had to fight back so that they didn’t eat everything and I managed to take a photo))). Garlic sauce with finely chopped dill was perfect! Everyone liked the baked potatoes and bacon and asked for more. This recipe is definitely going into my culinary repertoire! Thanks to the author!

150g of bacon (8 thin slices) was enough for 4 potatoes. The peeled tubers were completely covered with bacon. I used old potatoes; I can’t find any young ones now. 20 minutes without a lid in the oven, then under the lid. And it turned out just great. Without any sauces. Melts in your mouth. And the aroma... I served it with salted mushrooms - nothing could be simpler or more delicious! Thanks to the author of the recipe)
