Autumn minestrone
Want to add a little Italy to your kitchen? Easy with this soup! Minestrone means “big soup”, a soup with many ingredients.
The idea behind minestrone is that the soup should accurately reflect what is currently available at your market or garden in a given season. This is a universal dish, and there is no strict recipe for it.
What’s good about minestrone is that in summer it turns out light and is prepared from the freshest vegetables, and in winter it is made more filling by adding potatoes, mushrooms, pasta or beans.
Add whatever you like - that's the point of cooking and minestrone soup specifically.
Today I made a rich, aromatic, autumn minestrone, spicy and very tasty!

Step-by-step preparation
STEP 1

Cut all vegetables into small cubes.
STEP 2

Finely chop the onion and garlic and saute in a saucepan in olive oil until transparent.
STEP 3

Add carrots and pumpkin to the onions and garlic, continue sautéing the vegetables for another 3-4 minutes.
STEP 4

Add pepper, tomato and celery and simmer covered for a couple of minutes.
STEP 5

Add broth (I use mushroom broth, I always freeze the broth for soups and sauces after boiling mushrooms), add salt and pepper to taste and after three minutes turn off the soup. Let it sit for a few minutes. In the meantime, we will chop the celery greens and brisket for serving.
STEP 6

Add pieces of meat and herbs to the plate. Fragrant, spicy and very tasty! Bon appetit:)
