Autumn minestrone

This is a universal dish, and there is no strict recipe for it. What’s good about minestrone is that in summer it turns out light and is prepared from the freshest vegetables, and in winter it is made more filling by adding potatoes, mushrooms, pasta or beans.     Cut all vegetables into small cubes.

    Finely chop the onion and garlic and saute in a saucepan in olive oil until transparent.

    Add carrots and pumpkin to the onions and garlic, continue sautéing the vegetables for another 3-4 minutes.

    Add pepper, tomato and celery and simmer covered for a couple of minutes.

    Add broth (I use mushroom broth, I always freeze the broth for soups and sauces after boiling mushrooms), add salt and pepper to taste and after three minutes turn off the soup. Let it sit for a few minutes. In the meantime, we will chop the celery greens and brisket for serving.
