    How to make a pickled assortment of vegetables and zucchini for the winter without sterilization? Prepare all products. Choose the vegetables for preparation according to your taste; if you decide to add cucumbers, first soak them in water for a couple of hours. Instead of basil, you can use parsley or dill umbrellas.     Wash all vegetables thoroughly. Peel the garlic, remove the seeds and stalks from bell peppers and zucchini, cut them into thin rings.

    Place all the vegetables in sterile jars in layers, add bay leaf and basil.

    Fill the jars to the top with boiling water, cover with lids and leave for 15-20 minutes.

    Drain the water from the jars using a special lid.

    Put salt in the jars (1 level tablespoon per liter jar), if desired, you can add a little sugar. I didn't add it because my cherry tomatoes are already very sweet. Fill the jars with vegetables with boiling water a second time, add vinegar essence (a third of a teaspoon per liter jar).

    Roll up the jars with lids, turn them upside down and wrap them in a towel (blanket or something else to keep them warm), leave them until they cool completely (from 1 to 2 days), then put them in a cool place for storage. Bon appetit!
