Arancini - rice balls stuffed with meat

Step-by-step preparation
- STEP 1 - For the filling, cut the onion into cubes and fry in oil for 5 minutes. Add minced meat to the onion, add water and bring to a boil, constantly kneading the minced meat lumps. Salt, pepper, add sugar and tomato paste. Stir and cook over medium heat for 20 minutes. Place parsley in the pan with the meat and heat for another minute. Then remove from heat and stir in grated cheese. 
- STEP 2 - Boil the rice until tender, mix with butter and grated cheese. Add the beaten egg and mix well. 
- STEP 3 - With your hands soaked in water, take a mound of rice and knead it in your palm. Place a spoonful of meat filling in the middle of the flatbread. Form a ball. Repeat with all the rice and filling. 
- STEP 4 - Beat the remaining eggs with a pinch of salt. Dip the aracini in flour, then in the egg and breadcrumbs. 
- STEP 5 - Fry in hot oil for 5-7 minutes (turning) until golden brown. The oil should cover the arancini by more than half. 
- STEP 6 - Arancini is ready! Bon appetit!
