Apple manna with kefir

Step-by-step preparation
STEP 1
Prepare the ingredients listed in the recipe. Remove butter, eggs and kefir from the refrigerator in advance. The oil should have time to soften, and the kefir and eggs should warm up to room temperature.
STEP 2
Pour semolina into a bowl. Pour in kefir and leave at room temperature for 35 minutes to allow the cereal to swell.
STEP 3
In a separate container, mix soft butter, sugar, vanilla sugar and salt. Stir thoroughly with a whisk or mixer until the sugar crystals are completely dissolved. Sugar can be replaced with a sweetener that is not susceptible to heat treatment. Instead of vanilla sugar, you can use vanillin (at the tip of a knife). It is important to be careful with its dosage, since if you overdo it with vanillin, the taste of the baked goods will be bitter.
STEP 4
Add eggs. Stir until smooth.
STEP 5
Pour the kefir-semolina mixture into the egg-oil mixture and stir until smooth. Add baking powder to the dough and mix again. You can replace baking powder with baking soda (1 teaspoon) quenched with 9% table vinegar or apple cider vinegar (1 tablespoon)
STEP 6
Prepare the filling. Which apples are best? Take green sweet and sour fruits. Wash them and dry with paper towels. Cut into small pieces. 2 apples were enough for me, since one was quite large, and the shape I used was not tall.
STEP 7
Fold the apple squares into the batter. Stir.
STEP 8
Line an ovenproof baking dish with high sides with oiled parchment paper and lightly grease it with vegetable oil with a high smoking point. Pour out the dough. Level the surface. Do not use a springform pan as the batter will leak out. It is not necessary to lubricate the silicone container with oil; the baked goods will not burn in it.
STEP 9
Preheat the oven to 180 degrees in advance. Bake the manna for about 40 minutes. Please note that your baking time and temperature may be different, since everyone’s technique is different. Check readiness with a wooden toothpick. Pierce the cake; if a toothpick comes out dry, the cake is ready. Remove the pan from the oven, let the semolina cool slightly, then transfer to a flat plate.
