    How to cook apple jam in slices with lemon so that the apples don’t turn out soggy? You will need a little more than a kilogram of apples, one lemon, sugar from 600 grams (if you don’t like it very sweet) to 1 kilogram (if you want it sweeter) and two glasses of water.

    Choose firm autumn varieties of apples, otherwise they will become soft and you will get jam, not jam in slices. Each apple slice in the finished jam should be whole and not fall apart. Wash and peel the apples. Remove the core and cut into thin slices (slabs). Weigh it. My net weight is 1000 grams.

    Now let's start cooking the syrup, this is the secret of proper jam in slices. Pour two glasses of water into the pan and add the required amount of sugar. 750 grams was enough for me. It turned out quite sweet, but not cloying. It is also important what kind of apples you use: sour ones require more sugar.

    Place the pan over low heat and cook until the sugar dissolves, stirring constantly so that the sugar does not burn to the bottom of the pan.

    Pour the resulting hot syrup over the apples. Let them steep in the syrup for 30 minutes.

    Then put the pan on the fire and start cooking the jam. First, bring to a boil, then reduce the heat and cook the jam for 20 minutes. If foam forms, remove it with a spoon. I didn't have one. Let the jam cool for 2 hours and boil again for 20 minutes.

    Then cool the jam again for 2-3 hours. Wash the lemon, remove all seeds and finely chop. Add lemon to jam. Cook with lemon for 20-30 minutes over low heat.

    The apple slices will become transparent and amber before your eyes. And when the jam sits for a while, the lemon will match the color of the apples and become transparent. The most delicious “Amber” jam made from apple slices with lemon is ready.

I have accumulated damaged apples of different varieties. I decided to trim them and make apple jam in slices with lemon. I didn’t peel the apples, this way the slices are better preserved. I got 1.5 kg, so I calculated the amount of other ingredients I needed on the site’s calculator. Separately, I cooked the syrup and poured apples into it. After about an hour, all the slices were saturated with syrup and drowned. After subsequent cooking, the apples began to become transparent. And finally, I cooked the jam to a beautiful amber color! The apple slices became transparent and remained intact! Thanks to lemon, the taste became more interesting, with a characteristic sourness and pleasant aroma. My syrup turned out to be quite thick, but it depends on the cooking time. From this quantity of products I got three half-liter jars.
