I prepared ajapsandal with meat in Georgian style. I have already prepared a similar dish, I like everything: the process, the taste and the undoubted usefulness. I stewed vegetables and meat in a large cauldron with a lid. At the same time, all layers are saturated with various juices and aromas. It makes a lot of juice, I love dipping fresh bread into it! I made a small addition to the composition, I simply cannot live without onions and carrots. I chopped the carrots coarsely so that they remained whole. This time I decided not to leave the meat raw; last time it was baked into a single “cake”. I like it better when the meat is in separate pieces. Therefore, I quickly fried onions, carrots and meat, they became the first layer. Then she began to lay out the vegetables. I first sprinkled the eggplants with salt and washed them after 15 minutes. I don’t peel them, for me the most delicious thing is the skin). But I removed the skin from the tomatoes. To do this, I made a cross-shaped cut and scalded the tomatoes with boiling water, then doused them with cold water. The aroma during cooking is simply magical, the spices contribute to this! The dish is equally delicious hot or cold!

Thank you very much for the recipe! Firstly, I simply adore Georgian cuisine, and secondly, I adore eggplants. I've been wanting to cook something new for a long time. Both me and our dad will like this dish, because... he does not recognize vegetable dishes. I think it will turn out very tasty and aromatic. Tomorrow morning I go to the store and start cooking.

So cook it, you definitely won’t regret it) But I have one question: is it possible to replace the eggplants with something else? Or will it not be the same? Tell.
