    Rinse the raisins and remove the stems. If the raisins are very dry, pour boiling water over them and leave for 10 minutes, then drain the water and dry the raisins.

    Continuing to beat, pour in room temperature kefir and vegetable oil.

    Pour the batter into a greased cake pan. You get a lot of dough, plus streusel, so choose a form that can accommodate everything. The internal size of my rectangular mold is 22 by 10 cm. The diameter of the round mold is 20-22 cm.

    Now prepare the necessary ingredients for the streusel.

    Place cold butter cut into cubes into a blender bowl, add flour, sugar and cocoa. Beat until fine crumbs are obtained. You can beat everything not in a blender, but grind it with your hands, but it’s much faster in a blender.

    Spread the chocolate streusel evenly on top of the dough. Place the cake in an oven preheated to 180°C for 45-50 minutes. The exact baking time depends on your oven and the thickness of the dough. Check the readiness of the cake with a skewer - it should come out dry. Remove the finished cake from the oven and leave to cool in the pan.

I really liked the airy cake in the oven! In general, I love kefir muffins; they always turn out well. The addition of chocolate streusel surprised me; I immediately wanted to try this combination. I forgot to add nuts to the dough; they were already fried and chopped. I decided to mix them with streusel. My daughter doesn’t like raisins, so I rarely add them to baked goods. The cake turned out tall and baked for 50 minutes. A crack appeared on top, as befits a cupcake) and the streusel crumbled a little, but that’s not a problem. The main thing is that the cupcake is very tasty! It has a silky structure, tender and juicy crumb. The crispy chocolate crust perfectly complements this incomparable airy pastry. I especially liked this cupcake with coffee. I recommend the recipe, I really liked it!

In general, I love baking with kefir, I make a similar cupcake very often, this is my “duty recipe”! Such baked goods always turn out tender. But the idea of ​​combining such pastries with chocolate streusel captivated me, since I love cocoa and, in principle, respect anything new. I'm taking this recipe to KK so I don't forget about the streusel!
