    How to make adjika from beets for the winter? Prepare the necessary products. I used young fresh vegetables and measured their quantities on a kitchen scale. Rinse the vegetables under running cold water, brush the root vegetables well.

    Peel the carrots and beets, wash and dry.

    Cut the carrots and beets into small pieces.

    Grind the vegetables in a way convenient for you - using a coarse grater, meat grinder or food processor.

    Place the chopped vegetables in a deep bowl. Combine them with salt, sugar and vegetable oil.

    Mix everything well and leave for 10 minutes so that the vegetables release their juice. If your vegetables are not juicy enough, then you will probably need a little more tomatoes or tomato juice than indicated in the recipe.

    Remove the seeds and stem from the bell pepper. Cut it into small pieces. Also chop the tomatoes.

    Grind bell peppers and tomatoes. This can be done using a meat grinder, grater or blender. Instead of tomatoes, you can take 200 ml of ready-made tomato juice.

    Peel and wash the garlic, cut off the tail of the hot pepper and remove the seeds. Chop the garlic with a knife or using a press, finely chop the pepper. The amount of garlic and pepper added to adjika will determine its final taste. You can adjust the level of spiciness of your adjika by decreasing or increasing the amount of garlic or hot pepper to your taste.

    Place the carrots and beets in a deep frying pan, add half a portion of tomato juice. Simmer over low heat, covering the pan with a lid, for 20 minutes. Stir occasionally and, if necessary, add tomato juice little by little to prevent the mixture from burning.

    Add chopped bell pepper and remaining tomato juice. Mix well.

    Add garlic, bay leaf and hot pepper.

    Simmer for 30-40 minutes with the lid closed over low heat, stirring occasionally. When the vegetables are well cooked, taste the adjika and add salt or pepper if necessary. Then pour in the vinegar essence and mix everything well. If desired, you can grind the finished adjika in a blender until it reaches a completely homogeneous consistency, after first removing the bay leaf from it.

    Wash the jars and be sure to sterilize them in a way convenient for you (in the microwave, oven or in a pan on the stove). Place the adjika into hot jars and roll up the lids. Leave the adjika on the table until it cools completely, and then put it in a cool place.

I didn’t expect that adjika made from beets for the winter would taste like regular adjika and it wasn’t even immediately clear that it contained beets. I liked the preparation, I will definitely make it again! Thanks to the author for the recipe
