Vegetable stew with potatoes
One of the most common dishes in any cuisine is vegetable stew. Its recipes are not so much in cookbooks as in the practical “to-do” sheet of any housewife. This is what we all cook when we need to do it quickly and from “what we have.” In these cases, the Russian housewife takes potatoes, carrots, onions and makes a sauce out of it all. Or, in other words, stew. Vegetables simply stewed in a frying pan with a little water turn out very tasty.
To the so-called You can add any other basic ingredients: zucchini, bell peppers, broccoli, tomatoes, eggplants, green and regular beans, white cabbage, celery, cucumbers. And all this in different proportions and quantities. The dish can be made thicker or thinner, with a delicious sauce made from sour cream and tomato paste.
To improve the taste of vegetable stew, it is advisable to fry all the vegetables in oil (preferably butter). Even if everything is then stewed or boiled in a pan. Or even bake in the oven or slow cooker. Potatoes for stew are usually cut into cubes - this way the food looks more harmonious. And the cabbage is thinly shredded or cut into squares. Carrots can be grated or chopped into medallions and their halves.
The process of preparing vegetable stew is approximately similar in most recipes. For convenience, you can cook everything at once in one thick-bottomed pan. The onions and carrots are fried first. Add the potatoes and fry everything for about ten minutes, stirring occasionally. Add the cabbage and fry for about five minutes (the cabbage should not be too tough). Next come the chopped tomatoes - with them the dish is simmered over low heat for five minutes. Lastly, lay out tender zucchini or zucchini. Here you need to cover the pan with a lid and simmer everything until the potatoes are completely cooked.
You can simplify the process by using a multicooker - there are many recipes for vegetable stew for it, in which all the products are placed in the bowl at the same time. And then they just wait for the cooking to finish.
