Vegetable stew without meat with potatoes and cabbage
Ingredients
Step-by-step preparation
STEP 1
How to make vegetable stew without meat with potatoes and cabbage? The photo shows the vegetables that we will need to prepare a delicious stew.
STEP 2
First of all, prepare all the products. Peel the potatoes, onions, garlic and carrots and rinse well in clean water. Rinse tomatoes, bay leaves and cabbage under running water.
STEP 3
Chop the onion into thin half rings or small strips. Grate the carrots using a coarse grater.
STEP 4
It is better to cut the potatoes into medium-sized cubes. Why average? If you leave the potatoes large, then the cooking time for the potatoes and cabbage may not match and there is a risk that the cabbage will turn into mush. However, if you are not using young cabbage, then the potatoes can be cut larger, since in this case the cabbage will cook a little longer.
STEP 5
Cut the tomatoes into small cubes. You can optionally peel the tomatoes first. To do this, you need to pour boiling water over the tomatoes, leave for a couple of minutes, then drain the water and remove the skin without much difficulty.
STEP 6
Place a frying pan with vegetable oil over high heat. When the oil is hot, add the onions and carrots. Stirring occasionally, fry the vegetables for about two to three minutes, until the onion becomes slightly translucent.
STEP 7
Send the tomatoes to fry, stir, reduce the heat slightly and simmer everything together for about 5 minutes.
STEP 8
At this time, let's take care of the cabbage. It can be cut into squares or chopped into small strips. Do as you like.
STEP 9
Add potatoes to skillet.
STEP 10
Next, add the chopped cabbage. Salt and add your favorite spices to taste. Mix everything carefully and leave to simmer on low heat under a closed lid for 20 to 30 minutes. After five minutes, open the lid slightly and check if there is enough liquid from the tomatoes and cabbage in the pan. If not, then add just a little water (50-60 grams will be enough), mix everything again and continue cooking with the lid on.
STEP 11
Periodically open the lid and stir the stew, at the same time check that the potatoes and cabbage are not burning. A few minutes before cooking, add bay leaf if desired. At the end of cooking, add chopped herbs and finely chopped garlic to the stew. Mix everything and remove the pan from the heat.
