There are a large number of different recipes for tomatoes in tomato paste for the winter, from which you can choose any one you wish. But if you adhere to minimalism, the ideal option is with such a composition. In addition to the basic products, you also need: salt, sugar and water.
The washed tomatoes are placed in jars and poured with boiling water for 15 minutes. During this time, boiling water, paste and spices are mixed separately. All this should boil for about four minutes. The water is drained from the jar and the filling is poured in instead. Everything is immediately rolled up with lids. The proportions are simple: 2 kg of tomatoes, 2 liters of water, half a liter of pasta, 250 grams of sugar, 2 tbsp. salt. Of course, vegetables must be selected according to size, preferably small, convenient for one bite. This rule applies to all recipes for this dish.
More complex cooking options use other ingredients, including a variety of spices and seasonings. For example, garlic, peppercorns, hot peppers, bay leaves, coriander seeds, dill, cloves, rosemary. Sometimes they take onions and vegetable oil. Instead of paste, use ready-made ketchup or tomato juice. Or chopped tomatoes in a blender.
There are cooking methods that involve stewing vegetables in liquid before rolling. It all depends on what kind of final product you want to see.
If the tomatoes are strong, plump, and fleshy, they can be cut into two halves. Or even into quarters when they are large. It is also acceptable to take slightly unripe tomatoes.
The dish is great as a component to other, more complex ones, and as an appetizer. In the second case, be sure to take small ones (cherries will also be good).
