STEP 1
How to make beans in tomato sauce for the winter? Prepare all ingredients. Beans can be used in any color, it does not affect the taste. It’s good if the beans grow in their own area. Firstly, the resulting product is environmentally friendly; we know in what conditions it was grown. Secondly, the beans are definitely fresh, properly preserved and healthy. STEP 2
Rinse the beans well under running water and fill with cold water so that there is twice as much water. Leave the beans in the water overnight.
STEP 3
In the morning, rinse the beans well again, add fresh water and put on fire. Bring the water to a boil, reduce the heat and cook the beans until tender, but do not overcook them so that the beans are intact and not overcooked. Rinse the prepared jars under running water with soda and sterilize. Wash the lids and boil. You will learn how to sterilize jars by reading the article at the end of this recipe.
STEP 4
Let's prepare the vegetables. Wash the carrots in running water, peel and grate on a coarse grater.
STEP 5
Peel the onion and cut into cubes. I used red onions, but you can also use regular ones.
STEP 6
Wash the tomatoes in running water and let the water drain. Cut them into cubes. If the tomatoes are large with thick skin, then it is better to remove it. To do this, pour boiling water over the tomatoes, carefully remove the skin and cut into cubes. You can leave the tomatoes diced or grind them in a blender bowl or with an immersion blender. I crushed it with a blender.
STEP 7
Pour vegetable oil into a frying pan and heat it. Place onions on it. Fry until transparent. Add grated carrots. Fry over medium heat, stirring occasionally, until the carrots are soft. Add chopped or pureed tomatoes to the vegetable frying. Simmer over medium heat for about 20 minutes.
STEP 8
Then pour the vegetable mixture into a saucepan with a thick bottom. Place boiled beans and tomato paste there. Pour in a small amount of the broth in which the beans were cooked. The remaining broth does not need to be poured out immediately, so that if necessary, more can be added to the preparation. Add salt and sugar, add chopped garlic and a piece of hot pepper. Bring the mixture to a boil.
STEP 9
Immediately place the beans in the tomato sauce into pre-sterilized jars. Cover with lids and place in a pan of water, the bottom of which is covered with a cloth. Place the pan on the fire and sterilize 0.5 liter jars over medium heat for about 20 minutes. Roll up the jars with lids. Let them cool completely upside down under a blanket at room temperature.
