Tomatoes in tomato paste with garlic
Ingredients
Step-by-step preparation
STEP 1
Let's prepare the ingredients. This snack can be made using commercial tomato paste, but it tastes much better if you make it with homemade tomato paste.
STEP 2
Let's start by preparing the vegetables. Tomatoes need to be ripe, but firm and strong. Wash the vegetables. Let the water drain from them.
STEP 3
Cut the tomatoes that we will use to prepare tomato paste into quarters and place them in a saucepan. Peel the onions and cut them into large pieces. We send the onions to the tomatoes, pour half a glass of water into the pan. Bring to a boil, reduce heat, simmer over medium heat under the lid for about 15 minutes.
STEP 4
Then grind the mixture into a puree with a blender, the skin of the tomato will collect on the surface, take it out. Add 2 tablespoons of sugar and 1.5 teaspoons of salt to the tomato paste. Stir and cook for about an hour over medium heat, stirring the contents of the pan occasionally. The tomato paste should boil down almost five times. Add 70 ml of table vinegar and cook for about 5 more minutes from the moment of boiling. Tomato paste is ready.
STEP 5
Let's move on to the tomato preparation. It is better to use small tomatoes for rolling. We pierce the tomatoes in several places with a toothpick so that they do not burst.
STEP 6
Wash the bell pepper, remove the seeds, cut into rings.
STEP 7
Peel the garlic, cut the cloves into several large pieces or slices.
STEP 8
Pour tomato paste and water into a saucepan, put on fire, add 2 tablespoons of sugar and 2 teaspoons of salt, a few black peppercorns, allspice, a couple of bay leaves. Bring the mixture to a boil. Cook for about 5 minutes. The jars must be sterilized in advance using any convenient proven method: in a water bath, in the oven or in the microwave. Wash the lids and boil.
STEP 9
Place the vegetables tightly in pre-sterilized jars, alternating them with each other. Immediately pour the boiling marinade over the tomatoes in the jars, up to the shoulders of the jars.
STEP 10
Cover them with lids and sterilize 0.5 liter jars in the oven for about 15 minutes, or in a water bath.
STEP 11
We roll up the jars with lids. turn it upside down, cover with a blanket and let cool. We put it away for storage in the pantry. Bon appetit!
