Squash caviar with tomatoes

    From this recipe you will learn how to prepare squash caviar with tomatoes for the winter. We take products according to the list.

    Let's start with the tomato. We need to remove the skin from it, to do this we make a cross-shaped cut on it and pour boiling water over it, keep it in boiling water for 1-2 minutes and remove the skin.

    Cut the peeled tomato into small cubes.

    Now heat up the frying pan, pour a couple of tablespoons of vegetable oil into it and add our chopped tomato. Add a little salt, sugar, ground pepper (if desired, you can add a little dried basil and oregano) and fry until the excess liquid evaporates, about 5 minutes. Now add tomato paste to the tomatoes and mix everything well, our dressing is ready.

    Let's move on to the rest of the vegetables. Wash the zucchini, cut off the ends and cut into small cubes (this will make everything easier to cook faster).

    Peel and chop the onion.

    Heat another frying pan and add the zucchini to it, let it also simmer slightly (2-3 minutes). Add onion and our tomato dressing to the zucchini, mix everything.

    Cover with a lid and simmer until done (it took me about 15 minutes). Don’t forget to stir the vegetables and at the very end add a little more salt, sugar, or rather whatever is missing for your taste.

    Our caviar is almost ready. Now let it cool a little and grind it in a blender. Now our caviar is completely ready. It can be eaten immediately, or it can be sealed for the winter in sterilized jars with a capacity of 0.5 or 1 liter, after boiling the caviar in the jars in a pan of water for several minutes. Store the workpiece in a cool place.

Since childhood, I have loved squash caviar on a piece of white bread. This sandwich is always an excellent addition to soup or dinner. And as a snack it is quite self-sufficient. I myself have never cooked squash caviar. And with a recipe for squash caviar with tomatoes for the winter, I decided to fill this gap. The recipe is absolutely simple and does not take much time (direct participation in the preparation takes about 15 minutes). From a minimal amount of ingredients you get an incredibly delicious dish. I decided to immediately pamper my family with squash caviar, so I didn’t close the jars of it for the winter. But I will definitely do it later. The caviar turned out to be very tender, with a rich taste and even some kind of creamy aftertaste. Irisha, I often cook caviar and stew, but mostly from eggplant. This spring I liked the zucchini adjika recipe because it was easy to prepare and I cooked it. This was a discovery for me, because I really liked the taste of zucchini (I had no respect for zucchini.) Now I will also prepare zucchini caviar according to your recipe.
