Egg pancakes are a great way to diversify your salad not only in taste, but also in appearance. With their help, you can beautifully decorate a dish and serve it to the festive table. For an omelet you need eggs and a little water.

The French were the first to try preparing salads with omelettes. At least that's what Internet sources say. In any case, this is an innovation that has recently appeared in the cookbooks of Russian housewives. Until now, people preferred to put boiled eggs in salads.

Such salads include the main ingredient - a fried egg pancake or omelette, cooked with the addition of water or milk. Due to the higher calorie content of the yolk, protein pancakes or an omelet fried with only whites are added to healthy versions of green salads. It does not require fluffiness and airiness, so beat the eggs with a fork, combine with a liquid of your choice and salt. The mixture is poured into a frying pan in a thin layer and fried until cooked. The cooled omelette is cut into thin strips - this way it looks more beautiful in the dish. It is important not to overfill the liquid, otherwise the pancake will fall apart; it must remain dense.

You can add other products to the mixture, for example, grated cheese, cottage cheese, finely chopped mushrooms, tomato paste, spinach. You can fry on a non-stick surface, then no oil is required. If you want to make the omelette more fluffier, it is better to cut it into cubes.

Many ingredients are suitable for the salad, including: sausages, Korean carrots, croutons, cheese, fresh herbs, suitable raw vegetables, apples, oranges, pineapples - there are many ways and variations of preparation.

In another way, omelet in recipes can be used in the form of a roll or an envelope stuffed with salad. The procedure is almost the same: first the pancake is fried, then the filling is wrapped in it. You can serve it in portions on separate small plates or in glasses/creams. Or put the rolls on a common dish, so that the guests can then take them apart themselves.

Another design option is in the form of a snack cake, where the pancake is laid out through a layer, and chopped salad goes between them. The cake is cut into pieces like any regular cake. To prevent it from falling apart, you need to hold the layers together with a thick sauce; mayonnaise is fine.

It would be ideal to use a square pan. But if there is only a round one, that’s okay too. Use cast iron or non-stick to avoid unnecessary oil spills. Cut the pancake in half. Fold both halves and cut in half again. Put it back together. Now cut crosswise into thin strips. This cut is especially good if the salad contains carrots or sausage cut into ribbons.
