Kefir buns
If the dough contains kefir, this means that there is no need to add yeast to it. The fact is that in terms of its properties, kefir is equal to this product. Although there are many recipes in which both ingredients are found (and they do not interfere with each other).
The percentage of fat content of kefir does not matter when choosing. More precisely, it only affects the final calorie content of the dish. And the buns come out equally porous both at 1% and at 3%. They can be prepared sweet or savory, with or without filling, in different shapes and sizes. These can be spiral-twisted buns, round hemispheres, tubes, rolls, bows, triangles, roses, rings.
You can optionally add raisins and other dried fruits, candied fruits, seeds, nuts, and chocolate pieces to the dough for them. Any preserves, jams, marmalade, confitures, cottage cheese, sweets, boiled condensed milk, chocolate or custard are suitable as fillings. Powdered sugar, chopped nuts, crumbs of flour fried with sugar, and poppy seeds are good for sprinkling. For unsweetened variations, sesame, sunflower, in some cases vegetable oil with finely chopped herbs and garlic.
The advantage of kefir bun dough over yeast dough is that it does not require much time to proof. All necessary processes inside are carried out quickly. Let it stand for a maximum of half an hour - so that the products penetrate each other. Moreover, you can even make batter. And for baking, use silicone molds, fortunately, they come in a wide variety.
The minimum set of ingredients for the simplest bun recipe is: flour, kefir, sugar, vegetable oil and soda or baking powder. It is better to add the first one directly to kefir, and mix the second one with flour. Depending on the volume of dry and liquid ingredients, you will get a stiff dough that can be rolled out. Or a softer one, from which it is good to form balls and bake them in such a way that they come into contact with each other. For shine, it is better to brush the surface of the buns with whipped egg white before putting them in the oven. And the oven must be in an oven that has already been heated to the required temperature (usually 180C).
