STEP 1

How to bake buns with sugar and cinnamon using kefir? Prepare all the necessary ingredients. Melt the butter in advance in a water bath or in the microwave. Remove the kefir from the refrigerator in advance so that it is at room temperature.
STEP 2

Sift the flour into a mixer bowl or large bowl. This is necessary so that the flour is saturated with oxygen, and the buns turn out more tender and fluffy.

Add yeast, salt and vanilla sugar to the flour.
STEP 4

Also add baking powder and sugar to the mixer bowl.
STEP 5

Pour melted, cooled butter over dry ingredients.
STEP 6

Add the egg yolks to the mixer bowl with the remaining ingredients.

Pour room temperature kefir into the mixing bowl. Start kneading the dough. You can do this with a mixer, using special hooks for kneading the dough, or with your hands. The dough should be well kneaded, soft and slightly sticky.

Grease the top of the dough with oil to prevent a crust from forming during proofing. Cover the bowl with a napkin and place in a warm place for 60-70 minutes. During this time it will increase approximately three times.

After the specified time has passed, place the risen dough on a work surface greased with vegetable oil and knead it.

Divide the dough into 14 equal pieces.

You can start preparing the filling. Place sugar and cinnamon in a small container.

Mix the sugar and cinnamon well.

Take a ball of dough and knead it into a flat cake approximately 3 mm thick.

Grease the flatbread with vegetable oil.

Spread the cinnamon sugar filling evenly on the tortilla.

Pressing firmly, roll the cake into a roll.

Blind the edges of the roll well.

Stepping back about one centimeter from the edge, cut the roll in half with a sharp knife.

Wrap one resulting strip around the other.

Braid the roll into a braid.

Wrap the resulting braid and tie it into a knot. In the same way, form buns from the remaining dough balls.

Sprinkle a baking tray with a small amount of flour and place the resulting buns on it, cover them with a napkin and leave to proof for 20-30 minutes. Turn the oven on to 175 degrees.

After half an hour, brush the buns with beaten egg and bake them for 20-25 minutes in an oven preheated to 175 degrees. While the buns are baking, prepare the sugar syrup. To do this, pour sugar into a saucepan, fill it with water, add lemon juice and place over medium heat. With constant stirring, bring the future syrup to a boil and cook until the sugar crystals dissolve.

After 20 minutes, remove the baking sheet with buns from the oven and grease them with the prepared sugar syrup.
