Pyshki, or donuts, are round pies with a hole in the center fried in a large amount of oil. They are usually sprinkled with powdered sugar before serving. The tastiest ones are those that have not yet had time to cool down - these are often sold in street stalls in many Russian cities.

The most difficult thing in making crumpets is finding the most suitable dough for them. In principle, any yeast is suitable. But if you want a little less calories, you can stick to yeast-free kefir.

Puff pastry should ideally be smooth, elastic, easily hold its shape, but in no case hard. Otherwise, the baked goods will turn out rough and not very tasty. It is rolled out with a rolling pin into a layer 1 cm thick or less. Then, using two glasses, a large one and a smaller one, cut out circles with holes. Fry in boiling oil so that the donut is completely immersed in it. Place on a paper towel to remove excess fat. While still warm, sprinkle with powdered sugar. And served hot with tea or coffee.

Why hot? The fact is that after cooling, the crumpets become slightly deformed. The dough seems to “squat”. Although you can eat them in this form anyway.

The simplest set of products for puff pastry is as follows: flour, eggs, sugar, salt, vegetable oil, water and yeast. It can vary and be supplemented in different recipes. Due to the fact that crumpets remain a high-calorie dish, it is better to consume them with great caution.

There are variations of donuts in which they have a different shape: spherical or in the form of various figures (cookie cutters are used for this).
