Zucchini salad with tomatoes and bell peppers

We prepare the necessary products with spices to prepare a spicy and appetizing vegetable salad for the winter.
STEP 2
Grind three kilograms of tomatoes in a meat grinder into a large bowl.
STEP 3
We also grind two heads of garlic and one hot chili pepper into a common bowl in a meat grinder.
STEP 4
Pour the tomato juice from the bowl into a large saucepan and place it on the stove, which we turn on to high heat, then cover with a lid and bring to a boil, remembering to stir to avoid burning.
STEP 5
Pour two hundred grams of sugar into a saucepan with boiled juice, add two hundred milliliters of vegetable oil, two tablespoons of salt, mix and lower the temperature of the stove, cook, stirring for twenty minutes.
STEP 6
Cut one and a half kilograms of bell pepper into strips half a centimeter thick.
STEP 7
We cut one and a half kilograms of fairly soft zucchini into not very large pieces; if the zucchini has a hard skin and is overripe, you must first trim the skin and remove the seeds.
STEP 8
Place the chopped zucchini in a large saucepan with tomato juice.
STEP 9
Add chopped bell peppers to the pan.
STEP 10
Thoroughly mix all the ingredients in the pan and increase the heat on the stove, bring to a boil, then continue to cook the vegetables for twenty minutes, remembering to stir.
STEP 11
Add one teaspoon of citric acid to the pan with vegetables, mix well and let stand for about three minutes with the stove turned off.
STEP 12
Place the prepared hot vegetable salad into sterilized jars.
STEP 13
We close the jars with the prepared vegetable salad with sterile lids.
STEP 14
We turn each jar over and check for leaks, then cover it with a warm blanket or blanket and set it aside to cool for several hours.
