Yeast pies with red currants

These lush, rosy and fragrant pies are just begging to be put into your mouth! I make these pies in the summer from fresh berries, and in the winter from frozen ones, and they always fly away in my family! The dough for this recipe turns out very fluffy, and the currant filling gives the pies a pleasant sourness and aroma! Try it!

  1. STEP 1

    STEP 1

    Required ingredients for the dough

  2. STEP 2

    STEP 2

    Lightly beat eggs with sugar

  3. STEP 3

    STEP 3

Add salt and beat a little more

  4. STEP 4

    STEP 4

Now add kefir (instead of kefir you can take yogurt, whey or just milk and water 50:50)

  5. STEP 5

    STEP 5

Mix dry instant yeast with flour

  6. STEP 6

    STEP 6

Now we combine the dry and liquid components

  7. STEP 7

    STEP 7

Lastly, add vegetable oil (or melted butter) to the dough.

  8. STEP 8

    STEP 8

Using a spoon and then using your hands, knead the dough. You need to knead for 10-15 minutes, as they say, “until it stops sticking to your hands.” I usually trust this process to a bread maker, it helps me a lot with this!

  9. STEP 9

    STEP 9

Well kneaded dough is smooth, even and elastic

  10. STEP 10

    STEP 10

Now all he has to do is come within 1 hour. To do this, cover the dough with a towel and place it in a warm place.

  11. STEP 11

    STEP 11

Here are all the ingredients for the filling. Any currant is suitable for the recipe: red, black, white or a mixture of currants - it will be even tastier! By the way, frozen currants, in my opinion, do not lose their appearance or taste at all, so in winter we can also make such pies and feel the taste of summer!

  12. STEP 12

    STEP 12

    Currants, wash, sort, remove branches

  13. STEP 13

    STEP 13

After an hour, the dough came together very well, even though we didn’t use any dough, but mixed dry yeast directly with flour - after all, our yeast is fast-acting dry

  14. STEP 14

    STEP 14

The photo shows how airy it turned out

  15. STEP 15

    STEP 15

Now divide the dough into small balls. From the indicated ingredients I got 25 pieces.

  16. STEP 16

    STEP 16

That's all ready for making pies

  17. STEP 17

    STEP 17

We knead each ball of dough with our hands into a flat cake or roll it out with a rolling pin - whichever is more convenient for you! Add some currants

  18. STEP 18

    STEP 18

    On top - 1-2 teaspoons. l. Sahara

  19. STEP 19

    STEP 19

Carefully pinch the edges and place the seam side up so that the filling does not leak out.

  20. STEP 20

    STEP 20

Place the pies on baking parchment greased with a little vegetable oil

  21. STEP 21

    STEP 21

To grease the pies, lightly beat the egg, you can also add 1-2 tablespoons of water

  22. STEP 22

    STEP 22

Brush the pies with egg and they will take on a beautiful shiny golden appearance when baked.

  23. STEP 23

    STEP 23

Place in the oven to prove for about 15 minutes at minimum temperature. During this time the pies will rise well

  24. STEP 24

    STEP 24

Then bake at 180 degrees until golden brown. Baking time depends on your oven. On my gas oven it takes 30-40 minutes, on an electric oven it takes faster

  25. STEP 25

    STEP 25

Lightly sprinkle the finished pies with some water, cover with a towel and let cool. The aroma is simply magnificent!

  26. STEP 26

    STEP 26

    Enjoy your tea!
