Yeast pie with apricots and kefir jam

STEP 1
We prepare the necessary products for baking a delicious yeast pie with apricots and jam.
STEP 2
Pour five hundred grams of sifted flour and fifty grams of sugar into a large bowl.
STEP 3
Add half a teaspoon of salt and ten grams of baking powder to the bowl.
STEP 4
Pour one teaspoon of vanilla sugar into a bowl.
STEP 5
Add eight grams of dry instant yeast to the bowl.
STEP 6
Place two egg yolks in a bowl.
STEP 7
Pour three hundred milliliters of kefir at room temperature into a common bowl and knead the dough for about five minutes.
STEP 8
Add fifty grams of butter to the bowl with the dough and continue kneading.
STEP 9
Pour one tablespoon of vegetable oil into the bowl with the dough.
STEP 10
Grease the dough in a bowl with vegetable oil to prevent a crust from forming and, covering it with a kitchen napkin, place it in a warm place to rise.

After ninety minutes, the dough in the bowl had reached the desired condition and had risen well.
STEP 12
Grease the table with a small amount of vegetable oil and place the dough out of the bowl, which we then knead well.

Divide the dough into two pieces of different sizes.

Grease a suitable baking tray with a small amount of butter.
STEP 15
We put most of the dough into the mold and distribute it in an even layer, make small sides, and then set it aside for proofing.

Cut each of ten apricots into several pieces.

Place one hundred grams of jam on top of the dough according to your taste and desire and distribute it in an even layer.

Place chopped apricot pieces on top of the jam layer, not too far apart from each other.

Place small pieces of butter on top of the apricot layer.

Pour a little flour onto the table, then lay out the rest of the dough and knead, after which we make a long sausage out of it and cut off strips from it, which we cut in half.

On each formed strip of dough we make cuts in the shape of a herringbone with a knife.
STEP 22
We place the prepared strips on the pie and decorate them by linking them on top in the form of a pattern, after which we put them to proof.
STEP 23
After twenty-five minutes, brush the pie with beaten egg and place the pan on the bottom shelf of an oven preheated to one hundred and seventy-five degrees to bake the pie.
STEP 24
We take the prepared pie out of the oven after twenty to twenty-five minutes, after which we give it a little time to cool and cut into portions.
