    Place pieces of butter into the flour and rub into crumbs with your hands.

    Combine kefir with egg, sugar and salt and stir thoroughly.

    Pour the kefir-egg mixture into the flour crumbs and quickly knead into a pliable dough. At first the dough is sticky, but gradually it becomes more and more sticky from your hands and becomes homogeneous, soft and elastic. I was looking on the website for what I could cook with blackcurrants and found a recipe for yeast-free pies in the oven. I haven’t baked shortcrust pastry pies yet, so it was doubly interesting. I used kefir with a fat content of 2.5 percent. Egg category C1. The dough turned out soft and did not stick to your hands. I used cornstarch for the filling. I got 14 small pies. I baked them on siliconized parchment for 20 minutes: 10 minutes on the middle level of the oven, 10 minutes on the highest. The pies turned out very tasty. The dough is soft, but at the same time a little crispy. The filling turned out to be sour, which I really liked; you can feel the natural taste of the berries. I was always interested in whether dough made with kefir or sour cream turns out soft after baking? I only fry this dough in vegetable oil and they turn out very fluffy. But I was afraid to bake it.

Anait, if you roll out the dough thicker rather than thin flatbreads, then it will be soft, and if you make thin flatbreads, and there is a lot of filling, then of course you will get a crispy thin base, but it’s better to eat them fresh, hot, when they cool down - then this is no longer So tasty, in principle, like fried ones. I baked mine solely for health reasons, so as not to increase cholesterol. But this dough is also perfect for frying. It is very obedient and soft.
