  1. STEP 1

    STEP 1

Prepare the necessary ingredients to prepare yeast dough cakes in the oven. Take premium or first grade flour. Heat the milk a little; it should be slightly warm. Flax seeds can be replaced with sesame or sunflower seeds.

  2. STEP 2

    STEP 2

To activate the yeast, combine the yeast, sugar and 50 ml of milk in a small container and stir. Leave the mixture for 15 minutes until a foamy “cap” forms.

  3. STEP 3

    STEP 3

Sift the flour through a sieve into a wide, tall container. This will improve the baking properties of the flour due to the contact of all its particles with atmospheric oxygen.

  4. STEP 4

    STEP 4

In a bowl of suitable size, combine the rest (150 ml), milk, salt, sugar (0.5 tsp), mix.

  5. STEP 5

    STEP 5

Pour in activated yeast, mix well.

  6. STEP 6

    STEP 6

Add sifted flour. I do this through a sieve, thereby sifting it twice. Do not add all the flour at once; you may need less.

  7. STEP 7

    STEP 7

Mix the dough first with a spoon. If the dough is quite sticky, add a little more flour while mixing the dough. It is important to monitor the consistency of the dough so that it does not turn out too steep and heavy, otherwise the finished cakes will turn out too dense.

  8. STEP 8

    STEP 8

The dough should be soft, pliable, almost non-stick to your hands. Cover the dough with a towel and leave in a warm place for 1-1.5 hours. The rising time for the dough will depend on the ambient temperature as well as the activity of the yeast.

  9. STEP 9

    STEP 9

The dough should increase in volume by 2-2.5 times. In the warm season, usually all processes happen faster, so do not forget to monitor the dough so that it does not over-acidify.

  10. STEP 10

    STEP 10

Punch down the dough and place it on a table sprinkled with flour. Divide the dough into equal parts depending on the desired size of the cakes.

  11. STEP 11

    STEP 11

Mash each piece of dough into a round cake. You can use a rolling pin, but the dough is quite manageable and the cake is easy to form with your hands.

  12. STEP 12

    STEP 12

Place the tortillas on a parchment-lined sheet. Leave to rise for 15 minutes, covering the top with a light towel.

  13. STEP 13

    STEP 13

Lightly beat the egg, mix with vegetable oil and water.

  14. STEP 14

    STEP 14

Brush the mixture onto the top of the flattened flatbreads.

  15. STEP 15

    STEP 15

Sprinkle each flatbread with flax seed.

  16. STEP 16

    STEP 16

Bake the cakes in an oven preheated to 180C for about 20 minutes until golden brown.

  17. STEP 17

    STEP 17

Cool the finished flatbreads slightly and serve. Bon appetit!

Today I baked wonderful cakes from yeast dough in the oven. I kneaded the dough according to the recipe. It took almost 2 hours for the yeast to work and increase the dough in volume. I rolled out the prepared dough into flat cakes. I didn’t even need flour to swim up. True, I greased my hands with sunflower oil before starting to work with the dough and a little of the oil “got” to the dough. Brush the top of the flatbread with a beaten egg and sprinkle with flax seeds. The cakes were baked for longer than the specified time. To avoid drying them out, I didn’t wait for them to become very ruddy in color. Everyone loved the flatbreads! We could barely wait for them to cool down. Great recipe, thanks! I recommend!
