    How to bake whole sea bass in the oven? Prepare the fish. If you have a frozen carcass, then remove it from the freezer in advance and defrost it at room temperature. The recipe used freshly caught fish, so the cooking time does not include defrosting.

    Gut the fish, remove the gills and scales. Be sure to remove the black film in the belly of the perch. Rinse the carcass and dry it with paper napkins. Prepare the rest of the ingredients in the same way.

    Prepare the marinade. In a separate container, mix unflavored olive or vegetable oil, soy sauce, finely chopped garlic and dry spices. I used dry rosemary, red hot and allspice, a pinch of nutmeg (0.5 tsp of each spice). Instead of soy sauce, you can use a pinch of salt.

    Mix everything thoroughly, separate one tablespoon of the prepared marinade and leave it, it will be needed at the end of cooking.

    Make shallow cuts on both sides of the fish with a sharp knife, as in the photo. This will allow the perch to marinate faster and bake evenly in the oven. Cut off the fins. I cut some of it off and left some.

    Using a silicone brush, coat the sea bass on both sides with marinade and on the inside too. Leave to marinate for 10-20 minutes.

    Line a baking tray with baking paper. Place sea bass on sheet.

    Wash and dry the lemon. Cut half a lemon into thin slices. Place the citrus slices inside the belly of the fish. You can also add a sprig of fresh rosemary or parsley. Place the perch in a preheated oven for 30-40 minutes at 220 degrees, top-bottom mode.     Add the juice of half a squeezed lemon and finely chopped herbs to the remaining marinade. I used dill, you can use parsley or chives. Mix everything.

    Using a silicone brush, brush the remaining marinade onto the finished fish.

    Serve the sea bass before it gets cold!

We haven't tried sea bass yet. But they brought this funny big-eyed fish to a local store and immediately wanted to try it. I decided to bake it first. True, the carcasses were not large, but we still managed to stuff them. I cut off all the fins because... The perch has many sharp spines. Stuffed with lemon and parsley. By the way, I noticed that in all recipes for preparing this fish, lemon is used in large quantities. It apparently removes the specific smell and also helps improve the taste of the fish. Of the entire list of spices, I didn’t have nutmeg, I just don’t like it. But garlic, soy sauce, and rosemary worked really well. Although I have never used garlic in combination with fish before, a small amount added a piquant flavor and aroma. The fish was baked at 200 degrees for 40 minutes. This was quite enough. The sea bass turned out to be golden in color and looks very beautiful. To my taste it looks like river perch and blue whiting at the same time) Marine specificity is present, of course. Sea bass is one of the most delicious fish. There are practically no bones in it, and there is not a strong smell when frying. We sell it already cut, just roll it in flour and salt and fry it. Even without any spices it is very tasty, meaty, tender! You should try it, as the author of the recipe suggests; it has never been fried with additives before.

Thank you for the recipe Whole sea bass baked in the oven!) We cooked the perch without the head, bought it frozen, it turned out very tasty! I didn’t dare add hot peppers, we have gastritis, so I ground a mixture of peppers that they sell in the store as a set, the smell made my head spin. Garnish with rice and vegetables, delicious!

The whole sea bass baked in the oven turned out delicious and beautiful, but it stuck to the foil, and it didn’t work out nicely when removed from the foil. Next time I'll put baking paper on the foil first. Or maybe it depends on the side of the foil? I put it on the glossy side, you can try baking it on the matte side of the foil.
