Whole sea bass baked in the oven

Step-by-step preparation
STEP 1
How to bake whole sea bass in the oven? Prepare the fish. If you have a frozen carcass, then remove it from the freezer in advance and defrost it at room temperature. The recipe used freshly caught fish, so the cooking time does not include defrosting.
STEP 2
Gut the fish, remove the gills and scales. Be sure to remove the black film in the belly of the perch. Rinse the carcass and dry it with paper napkins. Prepare the rest of the ingredients in the same way.
STEP 3
Prepare the marinade. In a separate container, mix unflavored olive or vegetable oil, soy sauce, finely chopped garlic and dry spices. I used dry rosemary, red hot and allspice, a pinch of nutmeg (0.5 tsp of each spice). Instead of soy sauce, you can use a pinch of salt.
STEP 4
Mix everything thoroughly, separate one tablespoon of the prepared marinade and leave it, it will be needed at the end of cooking.
STEP 5
Make shallow cuts on both sides of the fish with a sharp knife, as in the photo. This will allow the perch to marinate faster and bake evenly in the oven. Cut off the fins. I cut some of it off and left some.
STEP 6
Using a silicone brush, coat the sea bass on both sides with marinade and on the inside too. Leave to marinate for 10-20 minutes.
STEP 7
Line a baking tray with baking paper. Place sea bass on sheet.
STEP 8
Wash and dry the lemon. Cut half a lemon into thin slices. Place the citrus slices inside the belly of the fish. You can also add a sprig of fresh rosemary or parsley. Place the perch in a preheated oven for 30-40 minutes at 220 degrees, top-bottom mode. STEP 9
Add the juice of half a squeezed lemon and finely chopped herbs to the remaining marinade. I used dill, you can use parsley or chives. Mix everything.
STEP 10
Using a silicone brush, brush the remaining marinade onto the finished fish.
STEP 11
Serve the sea bass before it gets cold!
STEP 12
Garnish the fish with fresh herbs, offer vegetables, lettuce, olives and black olives.
