STEP 1

Wash the apples well, remove the core along with the seeds (do not throw away the core).
STEP 2

The first half of apples - 1 kg. put in stainless steel pan and pour 1 lit. boiling water
STEP 3

Place on the stove and, stirring, bring the apples to a boil.
STEP 4

We continue to peel the apples, remove the core, which we do not throw away, but place in a saucepan.
STEP 5

Pour the removed cores with seeds into a glass of water, close the lid, put on the stove, bring to a boil and boil for 20 minutes at low temperature.
STEP 6

Bring the cooled pan with apples to a boil again, so in 1-2 cases there is no need to boil and cook for a long time, remove and drain, let cool in another pan.
STEP 7

Pour the second portion of our apples into the pan with water from the apples. Place on the stove and bring to a boil.
STEP 8

Stir our aromatic hearts, lower the cooking temperature and cook for another 15 minutes.
STEP 9

We drain and strain our apple concentrate from the cores into a saucepan and put 1 kg of sugar into it. apples 1.2 kg. Sahara.
STEP 10

Turn on the stove, place the pan, stirring well until the sugar is completely dissolved. Add a teaspoon of ground cinnamon to the boiling syrup.

Stir and add 0.5 teaspoon of citric acid so that our jam does not become sugary.
STEP 12

Place the apples into the boiling syrup with a slotted spoon and cook until transparent, removing the foam for 10-12 minutes.
STEP 13

Our jam is ready.
STEP 14

Place it with a slotted spoon into dry, sterilized jars.
STEP 15

After rinsing the lids well and treating them with boiling water, place them on a napkin. Pour the warm syrup into the jars to the very top and close them with dry lids.
