Step-by-step preparation
STEP 1
Pour out half the milk, set the remaining half of the milk to heat, add butter there until it melts completely. Remove from heat, add sugar and salt, allow to dissolve completely. Add cold milk.
STEP 2
Mix flour with yeast and add milk.
STEP 3
Knead the dough and leave for several hours, covered with film or a towel. Well, or, as the author advises, after kneading, put the dough in the refrigerator overnight (as I did), and take it out in the morning and leave it at room temperature for 2 hours.
STEP 4
Knead the risen dough and divide into equal pieces (8-10 pieces). Form the bagels properly, connecting the ends.
STEP 5
Bring water to a boil, carefully add baking soda and reduce heat. Carefully, one at a time, place them in the pan for 30-40 seconds, they should increase in volume, during which time you can turn them over a couple of times.
STEP 6
Remove from the pan, let the water drain, line a baking sheet and place the bagels. Sprinkle with sesame seeds or poppy seeds, or just coarse salt. There is no need to lubricate anything.
STEP 7
Bake at 180 degrees for 30 minutes, if you are making small buns, then 20 minutes, until golden brown.
STEP 8
