Tuscan minced meat soup

STEP 1
How to cook Tuscan soup with minced meat? Prepare the necessary ingredients. Use minced meat from any meat you like. If you buy ready-made, take high-quality without additives. But it’s better to make the minced meat yourself. I have beef, pork and chicken. Parmesan can be replaced with another hard cheese that tastes similar.
STEP 2
Wash the potatoes in running water with a brush and cut into pieces approximately 2x2 cm in size. This will cook them faster. To prepare the soup, use a 5-quart or larger saucepan. Boil water in it. Place the potatoes in it, cover with a lid and cook for 25 minutes over medium heat.
STEP 3
Peel the onion and garlic, wash, dry and cut into small cubes. This cut is considered classic for this soup. But if you don’t like chunks of onion in the soup, dip the whole peeled onion into the broth, and you can pass the garlic through a press.
STEP 4
To fry the minced meat, take a saucepan or deep frying pan. Cut half the butter into small pieces and melt it in a deep skillet over medium heat.
STEP 5
Place the minced meat, sugar and spices into the pan. Fry, stirring, over medium heat for 15 minutes. If large lumps of minced meat form, break them up with a spatula.
STEP 6
Place the remaining oil in the frying pan with the minced meat. When it is completely melted, add the onion and garlic.
STEP 7
Mix everything and fry for another 5 minutes so that the onions and garlic release their aroma.
STEP 8
Place the boiled potatoes in a separate deep container with a small amount of broth. If you boil the whole onion, remove it along with the onion.
STEP 9
Grind the potatoes (or potatoes and onions) into a puree using a blender.
STEP 10
Return the resulting puree to the pan with the broth. Pour cream into it. Bring to a boil and place the fried minced meat into the pan.
STEP 11
Add salt to taste, mix everything and cook for 15 minutes. Let the finished soup stand covered for 10 minutes and pour it into portioned bowls. The soup can be sprinkled with chopped parsley, dill or lettuce. Sprinkle with finely grated cheese. Bon appetit!
