    How to make turkey vegetable stew? Prepare your ingredients. Turkey fillet, take the breast, boneless. Preferably not previously frozen. For a healthier dinner, take fresh seasonal vegetables; with new potatoes and zucchini, vegetable stew turns out much tastier. Vegetables can be of any size, you can also add others as you wish, for example, celery, green peas, eggplant. Prepare a deep frying pan with a lid.

    Pour vegetable oil into the selected frying pan and distribute it evenly over the entire bottom of the frying pan. Wash and peel the potatoes. If the potatoes are young, then you don’t need to peel the skins, but just wash them very thoroughly with a brush. Cut the potatoes fairly large and place them in a frying pan.

    Peel the skins of the onions and carrots. Chop the onion, grate the carrots on a coarse grater (or you can also chop finely). Wash the bell pepper, cut off the stem and remove the seeds. Rinse again with cold water, dry and chop into small pieces. Add the chopped vegetables to the frying pan with the potatoes.

    Wash the zucchini, cut off the skin (it is not necessary to remove the skin from young zucchini) and cut into large cubes. Add the chopped zucchini to the frying pan with the previously prepared vegetables.

    Wash the turkey breast fillet and pat dry with a paper towel. Cut the fillet into small pieces and add to the pan.

    Wash the tomatoes, dry them, cut off the base of the stalk and cut into slices. Add the chopped tomatoes to the pan. Place the pan on low heat, close the lid and leave to simmer for an hour. Choose meaty, juicy tomatoes. If you wish, you can add tomatoes to the stew without the skin, after removing it and placing the tomatoes in boiling water.

    After an hour, remove the lid from the pan, add salt and ground black pepper to taste. You can also add your favorite spices - suneli hops, dried garlic, Provençal herbs, basil, etc. Carefully stir the vegetable stew, turn off the heat and leave to brew for 10 - 15 minutes.

    Serve the prepared vegetable stew with turkey hot or warm. This is a healthy dish in its own right. When serving, sprinkle the stew with fresh chopped parsley, dill, and cilantro.
