  1. STEP 1

    STEP 1

How to make turkey stew? Prepare all the necessary ingredients. In addition to the thigh and breast, you can use any other parts of the carcass. The total weight of the turkey with bones must be at least 1.4 kg. Lard is used to make the stew juicier.

  2. STEP 2

    STEP 2

Prepare jars with a total volume of 1.5-2 liters. Wash and sterilize the jars well. I do it as follows. Carefully pour boiling water into the bottom of the jar in a thin stream, to about a quarter of the volume. To prevent the jar from bursting, do not get water on its walls. Then cover with a lid and leave for 10 minutes. Afterwards I drain the water and the jar can be used.

  3. STEP 3

    STEP 3

Rinse the turkey and lard well under running water and remove all bones. Cut the turkey not too finely - into pieces about 2x2 cm. On the contrary, cut the lard as finely as possible. This way it will cook faster and you won’t feel it later.

  4. STEP 4

    STEP 4

Add ground pepper and salt to the chopped meat. Mix everything thoroughly.

  5. STEP 5

    STEP 5

Place a bay leaf and 3 peppercorns at the bottom of sterilized jars. Next, spread the turkey with lard, compacting it a little. There is no need to lay it all the way to the lid so that during cooking it does not rise and water does not get into the jars. I got 3 jars.

  6. STEP 6

    STEP 6

Cover the jars with lids. Place them in a saucepan, on the bottom of which place a towel folded in several layers. Fill the jars up to the hangers with cold water. Cook the stew for 5 hours after boiling. The fire should be such that the water simmers quietly.

  7. STEP 7

    STEP 7

Then roll up the jars, place them on the lids and wrap them in something warm. Leave to cool completely at room temperature, about a day. Then store in a cellar or other cool place.
