Trout in citrus glaze

If you don't have a grill, you can simply bake the fish in the oven. This is not the first time I am convinced that delicious dishes do not have to be complex and multi-component. This fish is further proof of this. A little sugar, zest and salt - your gourmet lunch or dinner is ready. In addition to trout, you can use salmon, pink salmon or other red fish.

    Prepare the ingredients. First wash, dry and clean the fish. Cut off the fins. Cut along the ridge. Cut each fillet into portions of approximately the same width.

    Remove the zest from the lemon and grate on a coarse grater. Combine sugar, lemon zest, sea salt and freshly ground pepper.

    Mix everything.

    Wash the trout thoroughly and dry. Cut into portions. Place the fish in a foil-lined baking dish, flesh side up.

    Sprinkle the citrus-sugar mixture evenly over the trout. Leave to marinate for 40 minutes at room temperature.

    Bake the fish on the grill mode in an oven preheated to 200°C for about 15 minutes. Turn off the grill and leave the fish in the cooling oven for another 10 minutes.
