Step-by-step preparation
STEP 1
How to make tomato juice through a juicer for the winter? Prepare all the necessary ingredients. Choose tomatoes that are juicy, ripe without damage. Read all the details of preparing winter preparations at the link in the article at the end of this recipe.
STEP 2
Rinse the tomatoes well in running water, remove the stems and cut into pieces so that they can be conveniently placed in the juicer. All tomatoes must be whole, not wrinkled, without cracks and especially without rot.
STEP 3
Pass all the tomatoes through a juicer.
STEP 4
Prepare jars and lids in advance for sealing juice for the winter. Just wash the lids and boil them in water for 5 minutes.
STEP 5
Rinse the cylinders well with baking soda in running water. Rinse well and steam for a few minutes. You can also sterilize the jar in the oven or microwave. Choose your proven method. The jars must be sterile and dry so that condensation does not form later (to avoid the formation of mold in the juice). So

Pour the juice into the pan, but not to the brim (a little more than 2/3 the size of the container. When boiling, the juice instantly foams and can run away. Place on fire.
STEP 7
During cooking, stir the juice often, reaching to the very bottom, otherwise it may burn. When it starts to boil, reduce the heat and stir constantly until the foam subsides. Be careful, if you prepare the juice for the first time, set the heat to low, because even with stirring, you may not be able to retain the foam.
STEP 8
When the foam begins to subside, add granulated sugar and salt to taste. Let everything boil for about 5 minutes. Almost all the foam will disappear. For 1 liter of juice I add 1 tbsp. l. sugar and about 3 tsp. salt without a slide. Add sugar and salt based on your taste preferences. If your tomatoes are sweet, then you can add less sugar.
STEP 9
Place the can on a plate and gradually pour in the juice in parts so that the can does not burst.
STEP 10
Seal the jar of juice with a lid and place it on the mat, bottom up, wrapped in a blanket. Leave until completely cool.
STEP 11
Ready homemade tomato juice can be cooled through a juicer and treated to family and friends. From 1 kilogram of juicy tomatoes, after heat treatment, I got about 600-700 ml of juice. Enjoy your treat!
