Tiramisu with matcha tea
Ingredients
Step-by-step preparation
STEP 1
How to make tiramisu with matcha tea? Prepare your food. Remove the eggs and cheese from the refrigerator in advance; they should become warm. But on the contrary, cool the cream well, then it will whip better.
STEP 2
Before cooking, prepare a bowl of cold water. Place ice in the water and we will place a bowl of heated yolks in it so that they cool quickly.
STEP 3
Take a fireproof bowl, put the yolks in it, pour in the wine. Add half the amount of sugar. Beat with a mixer, briefly, just to mix the ingredients.
STEP 4
At the same time, place a pan of water on the stove. Bring the water to a boil. Place a bowl of yolks on top. The water should not reach the bottom of the bowl; measure its amount in advance. Continue beating the yolks in the steam bath. This is done in order to avoid infection with salmonellosis. Eggs that have undergone heat treatment become safe. Whisk until thick, but do not overdo it; the yolks may cook into an omelette.
STEP 5
As soon as the mixture becomes thick, immediately remove it from the hot pan and place it in a bowl of cold water. The heating will stop and the yolks will not cook.
STEP 6
Add mascarpone to the cooled yolks.
STEP 7
Stir until smooth. I always mix the cream cheese by hand.
STEP 8
In a separate bowl, beat the cream with the remaining sugar until soft peaks form.
STEP 9
Add the cheese mixture to the cream and stir. Stir better with a spatula or whisk so that the cream does not over-whip.
STEP 10
Take half a glass of hot water. it should be at a temperature of about 80 degrees. Pour tea into it and mix well with a whisk. Pour the tea into a plate to cool.
STEP 11
Let's start assembling the dessert. I prepared it in serving glasses, but you can also make one large tiramisu. Dip savoiardi sticks in tea. They are very delicate, do not keep them in liquid for a long time, they may get soggy. Place them in one layer on the bottom of the mold. If you cook in portions, break the sticks first.
STEP 12
Place a second layer of cream.
STEP 13
Alternating cookies and cream, fill the entire mold or glasses.
STEP 14
Place the dessert in the refrigerator for at least 4 hours.
STEP 15
Sprinkle well-chilled tiramisu with tea on top through a strainer. When serving, garnish with berries.
