    Before cooking, prepare a bowl of cold water. Place ice in the water and we will place a bowl of heated yolks in it so that they cool quickly.

    Take a fireproof bowl, put the yolks in it, pour in the wine. Add half the amount of sugar. Beat with a mixer, briefly, just to mix the ingredients.

    At the same time, place a pan of water on the stove. Bring the water to a boil. Place a bowl of yolks on top. The water should not reach the bottom of the bowl; measure its amount in advance. Continue beating the yolks in the steam bath. This is done in order to avoid infection with salmonellosis. Eggs that have undergone heat treatment become safe. Whisk until thick, but do not overdo it; the yolks may cook into an omelette.

    As soon as the mixture becomes thick, immediately remove it from the hot pan and place it in a bowl of cold water. The heating will stop and the yolks will not cook.

    Let's start assembling the dessert. I prepared it in serving glasses, but you can also make one large tiramisu. Dip savoiardi sticks in tea. They are very delicate, do not keep them in liquid for a long time, they may get soggy. Place them in one layer on the bottom of the mold. If you cook in portions, break the sticks first.

This is a work of art!!! The bright, rich color of matcha tea gives this dessert a festive feel; raspberries are an excellent logical conclusion to the dessert. It’s very good that spoons stand vertically next to the glasses, so the diagonal in the frame is used very interestingly. Definitely, I won’t prepare such a dessert, since I can’t stand the taste of matcha tea, but if among my friends there are lovers of the unusual taste, then I will definitely prepare such beauty!
