    Pour warm water into a bowl, temperature 38-40 degrees. Stir the mixture until the yeast dissolves and leave for 15-20 minutes to activate it.

    Sift the flour and mix with salt. It is important to sift the flour to saturate it with oxygen. Then the baked goods will turn out airy and rise well during baking.

    After the specified time, it will become clear that the yeast has already started working - a “cap” should appear on the surface. This means that the yeast has woken up.

    Pour the dry ingredients into the yeast water.

    Add 30 ml of vegetable oil there, leaving a little to lubricate the top of the pita bread.

    First use a spoon and then use your hands to knead the dough. Knead it for 10-15 minutes, it should turn out soft and smooth, although it will remain a little sticky. If necessary, add flour, focusing on the consistency of the dough. Just don't overdo it - too much flour will make the pita bread tough. Gather the dough into a ball and place in a bowl.

    Cover the bowl with a towel and place in a warm place to rise for 30-40 minutes.

    After 40 minutes the dough should have doubled in size. Mine has even more than doubled.

    Divide the dough into 2 parts, set one aside for now and work with one. Roll it out into a round cake about 2 cm thick.

    Fold the edges of the cake towards the center, you will get something like a side.

    Turn the pita bread over and place seam side down on a baking sheet sprinkled with a little flour. You can also cover it with parchment. Prick the center of the pita bread with a fork to prevent it from puffing up during baking.

The dough has risen to more than double, but I waited about 1 hour. The dough is nice and soft. I made the flatbreads with my hands, dispensed with the rolling pin and placed them on top of the oven that was on. I increased the composition, so my pita breads did not fit on one baking sheet. I baked for two. You will probably be surprised, like me, but in literally 9 minutes the thick pita bread was ready. And when the finished lavash was greased with oil, there was a wonderful aroma. Thick lavash at home turned out tasty and aromatic. Indeed, a worthy replacement for our usual bread. I advise you to try it, it's easy and quick.

I didn’t bother with rolling it out, I just put a lump of dough on a baking sheet and kneaded it into a flat cake with my hand, and made holes on top with a fork all over the surface for beauty) the result is the same). I’ve already made it several times, we’re in quarantine, we go to the store once a week, so I had to look for a simple recipe for homemade bread!
