Thai rice with chicken, shrimp and cashews

Step-by-step preparation
STEP 1
Finely chop the chicken fillet.
STEP 2
Cut the pepper (I got yellow) into cubes.
STEP 3
Cut the onion into cubes.

Fry cashews over low heat for 5 minutes.

I take jasmine rice in bags - 3 bags. Please note that 600 grams should be ready-made boiled rice, not raw. Place water under the rice and add a little salt.

Boil the rice until done. On my package the recommended cooking time is 10-15 minutes, I cooked it for 10.

While the rice is cooking, peel the shrimp.

Remove the finished rice to a plate to cool.
STEP 10
Pour vegetable oil into a frying pan, fry the hot pepper (I used dry) and chopped garlic for 5 minutes and remove.
STEP 11
Pour the cooled rice onto a plate.
STEP 12
Place the chicken in a hot frying pan in the vegetable oil in which the garlic and pepper were fried and fry over high heat, stirring, for 3-5 minutes, add chopped peppers and onions, fry over high heat for another 5 minutes, stirring.
STEP 13
Meanwhile, chop the ginger (sometimes light yellow).
STEP 14
Add ginger to the pan, stir, then add nuts and shrimp. Stir and fry for 30 seconds.
STEP 15
Add rice.
STEP 16
Pour in soy sauce, stir, cover with a lid, and simmer over low heat for 1-2 minutes.

Sprinkle with chopped green onions and cilantro.
