STEP 1
How to make a tender cucumber salad for the winter? Prepare all the necessary ingredients according to the list. Rinse the cucumbers thoroughly and soak in cold water for eight hours, during which time you should change the water a couple of times. This action will allow the cucumbers to remain crisp even in a salad for the winter. Then drain the water and rinse the cucumbers again.
STEP 2
Cut off the ends of the cucumbers on both sides. Cut into thin circles, no more than 0.3 cm thick. If the cucumbers are very large, then they can be cut into halves, and then into quarters, so that the cucumber pieces are small, neat and approximately the same size.
STEP 3
Peel the onions and cut into rings if the onions are not large, or into halves of rings if you have a large onion.
STEP 4
Rinse fresh dill thoroughly in running water and dry with paper towels. Finely chop the greens. Peel the garlic cloves and cut them into several pieces. If you don't like the taste of garlic, you don't have to use it. Garlic gives the salad a pleasant spice, but has virtually no effect on the taste, since the use of dill in the salad makes the preparation very aromatic.
STEP 5
Take a deep bowl, place cucumbers, dill, onions and garlic in it. It is better to use plastic dishes or dishes made of non-oxidizing material.
STEP 6
Add sugar, salt, vegetable oil and vinegar to the vegetables. Mix the vegetables and dressing thoroughly until the sugar and salt dissolve. Cover the container with a lid and put it in the refrigerator overnight. During this time, the cucumbers will release quite a lot of juice, which is what we need.
STEP 7
In the meantime, let's prepare the dishes for spinning for the winter. It is better to take small jars for salad, so that after opening the salad will be immediately eaten by the family. Wash the jars with soda under running water and sterilize in a convenient way. I like to sterilize jars and lids in the oven. Place wet jars on a rack, neck down, in a cold oven. Turn on the temperature mode to 150 degrees. Sterilize 0.5 liter jars for about 10 minutes.
STEP 8
After the specified time has passed, remove the cucumbers from the refrigerator, stir again and immediately place in the prepared jars. To sterilize, place linen napkins on the bottom of the pan, pour water and place the jars in it. The water should reach approximately the hangers of the jars. Bring the water to a boil and sterilize over low heat for about 10 minutes and roll up the jars. Cover the jars with a blanket and let cool. Place the cooled twists in a cool place.
