STEP 1
How to prepare sweet tomatoes for the winter? Prepare the necessary ingredients. It is better to use tomatoes that are not large in size, so that they fit whole in the jar, and ripe, but dense, so that they do not burst when poured with boiling water. Wash the tomatoes thoroughly under running water and place in a colander to drain the water.
STEP 2
Wash the jars with soda solution and sterilize in one of the convenient ways: in a water bath, in the microwave or in the oven. When sterilizing jars in the oven, be sure to place them on the rack with the wet neck down. Wash the lids and boil or sterilize them together with the jars in the oven.
STEP 3
Rinse the greens thoroughly and dry with paper towels. If desired, you can add any other spices to taste. Peel the garlic cloves. Place the herbs and garlic at the bottom of sterile jars.
STEP 4
Place tomatoes on top of the greens. They should lie tightly in the jar, but should not squeeze each other so that the skin of the tomatoes does not burst when pouring. Boil water in a kettle or saucepan. Pour boiling water over the tomatoes in the jars. You need to pour water into the center in a thin stream so that the walls of the jar do not crack. Cover the jars with lids and leave for 15 minutes.
STEP 5
After the specified time has passed, you can begin preparing the marinade. Pour the water from the cans of tomatoes into the pan. This can be conveniently done using a special lid with holes. Add sugar, salt, cloves, peppercorns, cinnamon and bay leaf. Pour in table vinegar. Stirring with a spoon to dissolve the sugar and salt, bring the marinade to a boil and turn off the heat.
STEP 6
Pour the boiling marinade over the tomatoes in the jars. Immediately roll up the jars of tomatoes with sterile lids, turn them upside down, wrap them in a warm blanket and leave overnight until completely cooled. This preparation does not require additional sterilization; thanks to the table vinegar content in the marinade, the tomatoes will not spoil for a long time.
