Stewed red beans with vegetables

Ingredients.
STEP 2
First wash the beans and soak them in cold water overnight. Then boil in the same water until soft. Salt the beans 10-15 minutes before they are ready. Cooking time for beans is approximately 50 minutes. We drain the water.
STEP 3
Peel the carrots, wash them, and cut them into quarters.
STEP 4
Peel the onions, wash them and cut them into half rings.
STEP 5
We clean the pepper from seeds, wash it, and cut it into small cubes.
STEP 6
Fry the carrots in a frying pan with the addition of vegetable oil for 10 minutes, stirring occasionally.
STEP 7
Add chopped onion and fry for 5 minutes.
STEP 8
Add pumpkin, stir, cook for 2-3 minutes.
STEP 9
Then add bell pepper and mix. Add a couple of tablespoons of water or vegetable broth. If required, add vegetable oil. Simmer covered over low heat for 5 minutes.
STEP 10
Wash the dill, dry it, chop it finely.
STEP 11
Then salt the vegetables, add tomato paste, herbs, and herbs. Add spices if desired.
STEP 12
Combine vegetables with boiled beans, mix, simmer for 10 minutes.
STEP 13
Turn off the heat and let the dish sit under the lid for 5-10 minutes.
STEP 14
Serve the stewed vegetables and beans hot as a separate dish. Bon appetit!
