Take kefir with a fat content of 2.5% or higher. It should be at room temperature, so take it out of the refrigerator in advance.

    Make a depression in it and pour room temperature kefir, yolk, salt and soda into it.

    Knead into a soft, slightly sticky dough, adding a little more flour if necessary. You can knead by hand or using a special kitchen machine. Cover the finished dough with a towel to prevent it from airing.

    Now let's prepare the filling. It is better to take cottage cheese that is not dry, without hard grains with a fat content of 5% or more. The fattier the cottage cheese, the juicier and tastier the filling will be.

    Mix cottage cheese with yolk, sugar and vanilla sugar and mix, breaking up large lumps.

    If the curd mass turns out to be liquid, add 1 tbsp. l. semolina and leave for 10 minutes.

    On a floured board, roll out the dough into a sausage shape and divide into 12-14 equal parts.

    Fill the pan a quarter full with water and place a steaming dish with holes on top. If you have a slow cooker or a double boiler, then it’s better to cook in them, of course. And if there is none of the above, it’s also not a problem. You can cook the dumplings the old fashioned way in a colander, a sieve, or even stretch gauze folded in 3-4 layers over the pan and cook the dumplings in it.

    When the water boils, grease the pan with vegetable oil and place several dumplings at a distance from each other, as they will greatly increase in size.

The dumplings turned out to be very tasty! I made some with cottage cheese and some with fried cabbage. The dough is made from fermented baked milk, so it is beige in color. I liked everything! My daughter and I decided that next time we would try to make it with berries. And with potatoes too. In general, I don’t want to eat dumplings made from traditional dough anymore. )))
