STEP 1
How to make sponge cake with strawberry filling? To prepare a vanilla sponge cake for the cake, combine the eggs with sugar and beat with a mixer at maximum power for 2-5 minutes. During this time, the eggs will turn into a fluffy, airy mass and turn white. Then gradually add the sifted flour with soda and vanilla. Mix gently using a hand whisk.
STEP 2
Pour the finished dough into a baking dish (20-22cm) and place in the oven, preheated to 180 degrees, for 50-60 minutes. Check the readiness of the biscuit with a wooden skewer. Do not open the oven for the first 20-30 minutes, otherwise the biscuit may settle).
STEP 3
Remove the finished biscuit from the mold and cool. Then wrap it in cling film and put it in the refrigerator for several hours to let the biscuit rest. After that, cut it into 4 layers. Soak them in sugar syrup.
STEP 4
At this stage, you can simply add chopped strawberries to the cake. But I approach it differently. I'm making strawberry filling. At the same time, the filling becomes heat-treated, which extends the shelf life of the finished cake (this is especially true in the summer). To prepare the filling, cut the strawberries into pieces.
STEP 5
Add sugar and starch to it and mix well. Place on the fire and bring to a boil while stirring constantly. Cool the finished strawberry filling. If you are using frozen strawberries, then defrost them a little. There is no need to drain the juice.
STEP 6
To prepare the cream, combine heavy cream (fat content from 33%) with powdered sugar and beat until a fluffy, stable cream. Then stir the creamy curd cheese into the cream.
STEP 7
Place the cream on the biscuit crust, then spread the strawberry filling, not reaching the edges 2-3 cm. In this way, layer all the cakes.
STEP 8
Assemble the cake completely and level the top and sides using a pastry spatula. Decorate the cake on the occasion of your celebration. Place the finished cake in the refrigerator for several hours so that it hardens and soaks well. Enjoy your tea!
