Sponge cake with mastic flowers

STEP 1

In the evening you need to prepare the mastic and let it stand overnight in the refrigerator. First, soak all the gelatin in 4 tablespoons of water. Let it swell.

In a saucepan, mix the rest of the water with powdered sugar and glucose syrup. Heat over low heat, stirring until the sugar dissolves.
STEP 3

Bring to a boil and cook for 2-3 minutes.
STEP 4

Heat gelatin in hot water until liquid consistency.
STEP 5

Cool the powdered sugar in cold water to gelatin temperature.
STEP 6

Add gelatin and then glycerin to the powdered sugar. Mix everything well.
STEP 7

Pour the warm liquid mixture onto your work surface.
STEP 8

Stir until cool and thickened to a viscosity.
STEP 9

Wrap the mastic in cling film and leave it in the refrigerator overnight.
STEP 10

Before baking and assembling the cake, you need to make decorative elements, flowers and leaves from the finished mastic. To do this, the mastic needs to be divided into 6 parts and tinted in the appropriate color. One part is brown, the largest, this part is needed to cover the top of the cake. Three identical middle parts for three flowers - red, yellow and blue. A small part on green leaves. And leave a small part of the white mastic for the edging.

To create flowers, roll out the red, yellow and blue parts of the mastic into a layer.
STEP 12

Cut circles of two sizes from the layer - these will be flower petals.
STEP 13

First, glue several smaller circles on top of each other with water, turning them in a circle.
STEP 14

Then glue large circles with water in the same way.
STEP 15

Make beautiful neat red, yellow and blue flowers and leave to dry. By the way, you can use dyes of your favorite shades for your flowers!

Cut leaves of different sizes from a layer of green mastic.
STEP 17

While the flowers and leaves are drying, you can make the cake. Build a cake using your favorite cake layers and cream. Coat with mastic cream, smooth and let it harden. Then roll out a layer of brown mastic and carefully cover the cake with it.
STEP 18

Trim off the excess edge of the mastic at the base.
STEP 19

Roll out and cut out a strip of white mastic and make a border out of it. Decorate the cake with flowers and leaves. That's all, your favorite sweet cake is decorated with bright fondant flowers and is ready to delight your loved ones! Enjoy the taste and color!
