STEP 1
How to make a sponge cake with condensed milk and butter? First, prepare the necessary ingredients for the dough. Turn on the oven at 200 degrees in advance.
STEP 2
Divide the eggs into yolks and whites. Not a single drop of yolk should get into the whites, otherwise they won’t whip up later. Divide the sugar into two equal parts. Take two spacious containers. In one, combine one part of the sugar with the yolks, and in the other, the second part of the sugar with the whites.
STEP 3
Beat the yolks with sugar with a blender or mixer until a white bulky mass is obtained.
STEP 4
Beat the whites with sugar into a thick and dense foam with a mixer with a clean and dry whisk.
STEP 5
Using a spatula or spoon, gently fold the whites into the beaten yolks using upward movements. There is no need to use a mixer at this stage.
STEP 6
Sift the flour to oxygenate it. Thanks to this, the finished biscuit will turn out fluffier and airier. Add vanilla. Pour the flour into the egg mixture little by little, kneading the dough each time. Do this carefully so that it does not settle.
STEP 7
It is better to use a detachable pan for baking biscuits. Grease the bottom of the mold with butter. Pour all the dough into the mold and place in the oven for 30-35 minutes. The exact time depends on how your oven operates. For the first 20-25 minutes, do not open the oven door so that the biscuit does not settle. Check readiness with a wooden skewer or toothpick. To do this, insert it into the middle of the biscuit and immediately remove it. If it is dry, then the biscuit is baked well.
STEP 8
Remove the pan from the oven and, without removing the biscuit, turn it upside down onto a wire rack, thus allowing the biscuit to cool. Thanks to this trick, it will remain fluffy and definitely won’t collapse.
STEP 9
Prepare the ingredients for the cream. Remove the butter from the refrigerator in advance. In a bowl, beat softened butter with vanilla with a mixer. Place two yolks in a saucepan, add water and stir until smooth. Add condensed milk. Place the saucepan in a water bath and constantly stir the mixture until it begins to thicken. Remove the pan from the heat and let it cool. Add the mixture to the butter and whisk until smooth and thick.
STEP 10
Cut the cooled sponge cake into three equal layers. The edges, if not smooth, need to be trimmed according to the plate.
STEP 11
Soak the cakes with sugar, or better yet, berry syrup. It is more convenient to assemble the cake in a springform pan lined with parchment.
STEP 12
Wash and dry bananas and strawberries. Peel the banana. Cut berries and fruits into thin slices.
STEP 13
Grease the first cake layer with cream and place strawberry and banana slices on it. Do the same with the second cake layer. Cover it with the third one. Grease the sides of the cake with cream.
STEP 14
Prepare ingredients for glaze. Pour cocoa and sugar into a bowl, pour in the cream and add butter. Place the bowl in a water bath and, stirring constantly, bring the mixture to thicken. Let the glaze cool. Fill the top of the cake with chocolate glaze. Decorate the sides of the cake with wafer rolls and grated chocolate, place physalis and fresh berries on top. Place the cake in the refrigerator to soak, preferably overnight. Enjoy your tea!
