  1. STEP 1

    STEP 1

    Pour flour into a bowl.

  2. STEP 2

    STEP 2

    Add sugar and salt.

  3. STEP 3

    STEP 3

Add yeast. Mix dry ingredients together.

  4. STEP 4

    STEP 4

    Pour in warm water.

  5. STEP 5

    STEP 5

    And add warm milk.

  6. STEP 6

    STEP 6

Mix lightly with a silicone spatula (or spoon).

  7. STEP 7

    STEP 7

Place the contents of the bowl on a work surface lightly sprinkled with flour and begin kneading the dough.

  8. STEP 8

    STEP 8

At first the dough will be sticky, don’t worry, after you knead it for 7-10 minutes, it will become smooth and soft. But everyone’s flour is different, so if the dough is too liquid, then add a little flour, but don’t overdo it!

  9. STEP 9

    STEP 9

Once the dough is smooth and homogeneous, it is time to add the butter. Flatten the dough into a small flat cake and add soft butter.

  10. STEP 10

    STEP 10

    Wrap it up.

  11. STEP 11

    STEP 11

Knead the dough for another five minutes.

  12. STEP 12

    STEP 12

The dough will be soft and elastic.

  13. STEP 13

    STEP 13

Place the dough in a bowl, cover with a towel and leave in a warm place for one hour.

  14. STEP 14

    STEP 14

After an hour, place the dough on the work surface and flatten it into a flat cake.

  15. STEP 15

    STEP 15

Divide the dough into four equal parts.

  16. STEP 16

    STEP 16

Roll each piece into a ball.

  17. STEP 17

    STEP 17

    Pinch and roll.

  18. STEP 18

    STEP 18

Cover the dough balls with a towel and let rest for 10 minutes.

  19. STEP 19

    STEP 19

Then flatten each ball into a flat cake.

  20. STEP 20

    STEP 20

And again, form a ball in the same way.

  21. STEP 21

    STEP 21

Pinch, roll, cover with a towel and leave for 15 minutes in a warm place.

  22. STEP 22

    STEP 22

Lightly grease the frying pan with vegetable oil.

  23. STEP 23

    STEP 23

Place the buns in a frying pan (I have a frying pan with a diameter of 24 cm).

  24. STEP 24

    STEP 24

Cover with a lid and cook over low heat for 15 minutes.

  25. STEP 25

    STEP 25

After 15 minutes, remove the lid and turn the buns over.

  26. STEP 26

    STEP 26

Cover again and cook for another 15 minutes.

  27. STEP 27

    STEP 27

    Bon appetit!

I took a closer look at the photo reports and noted that I would rather not load the text with prefaces, and I don’t want to - the buns are worth attention. From other people's words - “tender, soft, airy” - friends focused mainly on consistency. For my part, I want to share the notes that each proofing plays its role, and you should not skip the waiting stages - try to strictly follow the recipe for the sake of taste. Also, perhaps someone should dry the buns in the oven, if, say, the last batch turned out damp - the frying pan must be suitable for this recipe, otherwise you will have to finish baking. I brush them with milk and sprinkle them with poppy seeds before the oven - friends have become accustomed to this option over the three months that I have been repeating this dish
