I only make cuts along the back every 5 mm, so the small bones are not felt at all.

You don’t have crucian carp, you have crucian carp! There is no need to make any cuts in crucian carp, as everything is fried that way. But the big ones need it, you’re doing it right. Only the small ones are sweeter and just melt in your mouth. I always bought large crucian carp until the seller advised me to try small ones. And now my husband only asks for small ones
