For lunch I made simple red lentil soup without meat. It is done very simply and quickly, absolutely anyone can do it. I did not cook the soup using broth. Added diced onions to it. Another 10 minutes before the end of cooking, I added bay leaves and dried parsley. The soup turned out tasty and light. The whole family liked it.

I made a simple red lentil soup without meat especially for my daughter, but my husband and I enjoyed our lunch. I cooked it in water; it would probably be even tastier with broth. I first washed the lentils and then soaked them for an hour. Then I rinsed it again with clean water. I think this procedure resulted in less foam forming in the soup. Red lentils cook quickly, and they become soft and do not remain whole. And we like it. I cut the potatoes into small pieces and grated the carrots on a coarse grater. Cooked everything together until the potatoes were soft. In addition to salt, I added bay leaf to the soup for flavor. My daughter liked that there was nothing “extra” in this soup). This is a very tasty, bright and aromatic soup! It's rich but light. There is a sweetish aftertaste, probably due to the carrots. Lentils are soft and pleasant in consistency.
