STEP 1
How to make sauteed zucchini. Prepare the necessary ingredients. Wash the vegetables, dry off excess moisture with paper towels, and peel.
STEP 2
I like the carrots to be felt in the dish, so I cut them into small cubes. You can cut it into circles, semi-circles as you like, or grate it on a coarse grater.
STEP 3
Peel the onions and rinse with cold water. Cut into small cubes.
STEP 4
If you are using young zucchini, it is not necessary to remove the skin. First cut the zucchini into circles, and then cut each circle into halves or cut into medium-sized cubes. It is better to peel older fruits, remove the seeds and chop if necessary.
STEP 5
Take multi-colored bell peppers; they will make the dish look more colorful. Wash the pepper, cut in half, remove seeds and cut into medium-sized slices.
STEP 6
Pour boiling water over the tomatoes and remove the skins. Cut into small cubes. Or you can make tomato puree from the fruit by chopping the tomato in a blender or grating it on a coarse grater.

Chop the dill, washed and dried with paper towels.
STEP 8
Pour refined vegetable oil into the frying pan. I used olive oil, you can use sunflower oil. When the oil is hot, add the chopped onions (I also added green onions, but this is not necessary) and fry until translucent. Stir to prevent the onion from burning.
STEP 9
Add chopped carrots and fry over low heat until soft and golden. Stir occasionally.
STEP 10
Add the zucchini to the pan and stir. And fry for about 10 minutes until the zucchini is done. Finally, add salt and pepper to taste.
STEP 11
Place bell peppers in the pan with the vegetables. Stir and continue to cook for about 5 minutes until the peppers are soft.
STEP 12
Now add chopped tomatoes and stir. The tomato should give juice, thanks to which the contents will be stewed and not fried. If there is not enough liquid, add a little water (about 1 tablespoon). Simmer the sauté over low heat until excess liquid evaporates.
STEP 13
Peel the garlic cloves, chop finely with a knife or pass through a press. Add dill and garlic to the pan with the remaining vegetables. Stir. Simmer everything together for 2 minutes and remove from heat.
STEP 14
The vegetable sauté is ready! Serve it warm or cold, as an independent dish or as a side dish. Bon appetit!
