STEP 1

How to make a salad with rice for a tourist's breakfast? Let's prepare all the necessary ingredients to prepare the "Tourist's Breakfast" salad. As with any preparation, we select fresh, not limp, not spoiled vegetables. This is very important when preserving, this is how we insure against poisoning and botulism. Then we will peel the vegetables and wash them thoroughly.
STEP 2

Pour refined sunflower oil into a basin or stainless steel pan with a thick bottom. Heat the oil thoroughly over medium heat. If you put vegetables in cold oil, they will release excess juice and will not give a wonderful aroma.
STEP 3

Cut the onion thinly and add to the heated oil. Stir and fry for 3-5 minutes over medium heat.
STEP 4

Remove the stem from the tomato and cut into pieces. Now we puree them with a blender, or you can pass them through a meat grinder with a fine grid. Add the puree to the fried onions and stir. Reduce the heat to low and simmer the contents for 10 minutes.
STEP 5

Grate the carrots on a coarse grater and add to the fried vegetables, mix.
STEP 6

Peel the bell pepper from the stalk and seeds and cut into thin strips. We put it in the pan too.
STEP 7

Salt all the vegetables. There are also a few secrets about salt so that the preparations are well stored. The salt must be coarse and in no case iodized. The best option is purified sea salt.
STEP 8

Wash the rice in warm water until clear and add to the vegetables. I prefer parboiled rice because I like the grains to stay in their firm form. If you like softer and more enveloping salads, take plain long rice.
STEP 9

Mix everything thoroughly until the ingredients are evenly distributed.
STEP 10

Close the lid and simmer everything for 35-40 minutes, until the rice is cooked. The mixture must be periodically opened and stirred so that the salad does not burn. If the rice is not ready yet, and you feel that there is not enough liquid, add a little boiling water. Then pour in the vinegar, stir and cook for another 6-7 minutes.
STEP 11

We are preparing our banks. First, we wash them thoroughly with hot water and baking soda, rinse and sterilize. I usually put a special ring on the pan, bring it to a boil and put the jar upside down. I boil the metal lids for 3 minutes. You can prepare the jars in any way convenient for you - in the oven or microwave.
STEP 12

We take the hot prepared jars and immediately transfer our salad, compacting it tightly to the shoulders. Roll up the prepared lids and wrap in a warm blanket until completely cooled.
STEP 13

We put it in a cool place, such as a cellar. And when necessary, open the jar and enjoy our “Tourist’s Breakfast” salad.
