STEP 1
How to make a winter salad with beans and tomatoes? Prepare all the products listed on the list. It is better to take tomatoes that are seasonal, juicy, and have a sweetish taste.
STEP 2
Pre-prep the beans. Soak it overnight in cold water. Use more water, as the beans will swell during the soaking process. If you have young beans, you can skip this step.
STEP 3
Boil the beans until half cooked (about 30 minutes). Drain the beans in a colander.
STEP 4
Peel the onions and carrots. Remove the core with seeds and stem from bell peppers. Grate the tomatoes or grind them through a meat grinder. Rinse vegetables in cold water.
STEP 5
Cut carrots, peppers and onions into small cubes.
STEP 6
Place chopped vegetables, beans and tomatoes into a cauldron or thick-bottomed pan.
STEP 7
Add salt and sugar, pour in vegetable oil. Mix everything thoroughly. Cover the cauldron with a lid and put on fire.
STEP 8
Bring to a boil over high heat, then reduce the heat to low and simmer everything together for one hour.
STEP 9
Open the lid from time to time and stir the salad. At the end of cooking, taste and add salt or sugar if necessary. Pour vinegar into the cauldron, stir and leave for another five minutes.
STEP 10
Place the prepared salad in jars that have been sterilized in advance and close with sterile lids using a special key. You can sterilize the container in a microwave, oven or water bath. Pour boiling water over the lids and leave for 5-10 minutes.
STEP 11
Turn the workpiece upside down and wrap it in a warm blanket. Leave until it cools completely, and then put it in the basement or pantry.
STEP 12
Amazingly delicious bean salad is ready!
